The first time I ate a blossom, I expected it to be sweet. I associated flowers with sweet things, conceptually. Rather, they tend to taste more vegetal, or even spicy. Sometimes, it is their scent that drives the flavor impression. And always, blossoms add beauty to the recipes they grace. We have 10 beautiful blossomy ideas to tempt you below.
1. LILAC SUGAR DONUTS
Michelle Lopez, of Hummingbird High, got seduced by the scent of lilac blossoms in her backyard, after a spring rain. It inspired her to create these ethereal Lilac Sugar Donuts.
The donuts are fashioned out of lovely, light, eggy, brioche dough, to make a perfect pillow-bite, which is lifted to heavenly heights by the lilac sugar -- lilac petals are immersed in sugar, until they’ve shared their intoxicating scent.

2. NATURAL RAINBOW CAKE
This Rainbow Cake from Twigg Studios gets its color and flavor spectrums from all-natural ingredients, including a gorgeous array of organic fruits, vegetables, such as green matcha, beets, carrots, strawberries, blueberries, and blackberries.

4. WHITE CHOCOLATE CHUNK LAVENDER ICE CREAM
This White Chocolate Chunk Lavender Ice Cream, from How Sweet Eats, somehow manages to be light, rich, deep, and delicate, all at the same time. It’s a perfect summertime sweet dream.

5. LIME, MANGO AND ELDERFLOWER CAKES
These tropical Lime, Mango, and Elderflower Cakes, from Izy Hossack, of Top With Cinnamon, were made for an Edible Flower Virtual Potluck among a group of blogs, organised by Will Frolic For Food!
Hossack adapted the recipe from one in Women’s Weekly Indulgent Cakes. The elderflower-lime syrup, candied lime zest, and tiny gems of mango give these cakes a citrusy-floral headiness. There’s elderflower in the icing, and the blossoms decorate with flourish.

6. LITTLE PISTACHIO & ORANGE BLOSSOM WATER CAKES
Emma Gardner, of Poires Au Chocolat, was inspired by the blossoms of early spring. After filling her flat with forced hyacinth and narcissus, the scent moved her to set about to create theses heady Little Pistachio and Orange Blossom Water Cakes. Check out her recipe here.
7. PURPLE KALE & PANSY SALAD
A Purple Kale and Pansy Salad, from the view from great island, delights us with bright purple blossoms to match the purple kale. This salad is bursting with color and nutrients. The tangerine poppy seed vinaigrette adds sweet citrus notes.

8. FRIED ZUCCHINI BLOSSOMS WITH BASIL RICOTTA
These delicate Fried Zucchini Blossoms with Basil Ricotta, by Laura Davidson, of Blogging Over Thyme, pillows, with gossamer petal pillowcases, stuffed with creamy lemon basil ricotta. It’s a beautifully light crispy dreamy bite.

9. CHIVE BLOSSOM VINEGAR
This Chive Blossom Vinegar recipe, from Lindsay-Jean Hard, of Food52, makes a beautifully pink-hued vinegar.
These jars contain two simple ingredients: lightly colored vinegar and chive blossoms. You will strain the flowers out after letting them infuse the vinegar for a week or two.
This is a wonderfully light and floral creation that you can use to top salads, add to recipes, or give as a gift!
