Flowers have been a beautiful culinary ingredient since Roman times. Victorians loved floral embellishments in their dishes. And they developed another trend resurgence in the ‘90s. Now, the trend is blossoming anew.

Le Gargouillou de Jeunes

Chef Michel Bras created what is arguably the most decadent dish of flora: His famed “Le Gargouillou de Jeunes,” made from 40 - 60 vegetables, herbs, leaves & edible flowers, costs over $200. You must reserve it a few months in advance if you want to graze upon it at his restaurant in Aubrac, France. Many consider it to be the best vegetarian dish on Earth.

But flowers are more than just pretty faces. They are good sources of fiber, vitamins, and minerals. They add another level of significance to the latest nutritional advisory to ‘eat a rainbow’ every day to make sure that we get the nutrients we need.

Nasturtium

Flowers such as chives blossoms, nasturtiums, marigolds, hibiscus, violets, and roses can boost your vitamin C.  Flowers’ bright colors indicate that they are rich in phytonutrients, flavonoids and antioxidants, which can help prevent heart disease and certain cancers.

Mustard Flowers on Sushi

Calendula, elderberry flowers, goldenrod, honeysuckle and hyssop all aid digestion.

Dandelions are high in vitamins A, B complex, C, and D, along with minerals such as potassium, calcium, zinc, and iron.

Flower Sparklers

Sparklers™ are another type of amaranth blossom. Their reddish color is due to their anthocyanins content.

They can give an extra kick to cocktails or cleanse your palette between courses. Buzz Buttons flowers come from a small tropical plant native to Brazil and Paraguay.
