EGGS ARE BEAUTIFUL FOR MINDS & BODIES NOW
There are a number of recent studies out that are showing that eating up to 3 eggs per day is really good for our bodies and minds.
1) Eating whole eggs together with raw vegetables helps our bodies to absorb carotenoids, antioxidants that reduce risk for heart disease and some cancers. (2015 Dietary Guidelines Advisory Committee Report)
2) Eggs are a superfood -- with high nutrient/calorie ratio. They are one of the best sources of choline.
3) Cholesterol found in eggs doesn’t adversely affect human blood LDL (bad) cholesterol and it positively impacts HDL (good) cholesterol.
4) Studies show that consuming Omega-3 enriched poultry and fish eggs (caviar) significantly reduces harmful triglycerides in the blood. (35, 36).
5) Eggs may reduce risk of stroke according to numerous studies.
6) Eggs improve brain, bone, eye, and skin health. They also support healthy body weight ratios.

Michael Natkin, of Herbivoracious, found an exquisite egg dish at Canlis, in Seattle.
Canlis chef Jason Franey, formerly of New York’s Eleven Madison Park, created an egg fantasy with Asparagus with Sauce Gribiche, Quinoa “Tabouli” and Warm Egg Yolk.
One of the genius elements of this recipe is the fried egg yolk. To make it, egg yolks are whisked together and cooked, sous vide. They are then frozen into little spheres, rolled in panko, flash-deep-fried to develop a crisp “shell” and a melty middle, then cut in half and plated.
Natkin, a former software engineer who developed After Effects for Adobe and cool animations for Industrial Light and Magic, is a serious foodie at heart. He’s now fully committed to writing about and working with food.

Here’s a beautiful spin on Scotch Eggs by Scarlett Gaus, of Fork & Flower -- Scotch Quail Eggs. As an added twist that really rocks, they’re made with merguez, a spicy Moroccan lamb sausage.

Kenzi Wilbur, Managing Editor of one of our favorite sites, Food52, shared her fabulous recipe for Scrambled Egg Tacos. She thinks it makes a perfect midnight snack. We think it’s a beautiful breakfast too.
If you think quiche is boring and passé, you will be delighted to see Allison Cay Parker’s beautiful recipe for Leek, Lemon, and Feta Quiche, which she shared on Food52. With fresh bright flavors and a touch of ouzo, it sings Spring!
Fish eggs and chicken eggs make the most beautiful partners. The rich creamy texture of chicken or quail egg yolks seduce your whole mouth, while caviar pearls burst through with their complex salty juice.
Check out the magnificent Egg on Egg on Egg, by Sandhya & Ali, of The Caviar Blog. It features fresh egg noodles, topped with soft boiled quail egg, Wild Plaza Golden Whitefish and Osetra caviar.
L’Ambroisie a 3-Michelin starred restaurant in Paris, does amazing things with eggs. Aiste Miseviciute, of LuxeEat loved its Soft Boiled Egg with Watercress Sabayon, Green Asparagus and Caviar. It is deceptively simple and totally decadent at the same time. See more here.
