WATERCRESS AND LEEK SOUP

This pastel green soup (top) by Ashley, of Local Haven, is perfectly filled with spring vegetables, with loads of leeks and piles of lightly peppery watercress and fresh palate-cleansing parsley. A touch of cream mellows its bite. Drops of olive oil make a fragrant and pretty raindrop-inspired garnish. Get the recipe here.

 

BELEZZA SPRING BUNNY SOUP TUREEN WITH LADLE

The Bellezza Spring Bunny Soup Tureen with Ladle, handmade by artisans in Tuscany for VIETRI, is a springtime joy. Perfect for any of the Spring Soup recipes in this post.

 

FIRST OF SPRING ASPARAGUS SOUP

We love the First of Spring Asparagus Soup, by Steve Dunn of Oui Chef. It is full of earthy early asparagus magic, greened up further with handfuls of fresh spinach. He does cheat seasons a bit, with the addition of fresh summer basil, but he happily give him a pass on that, because it adds such a beautiful note to the dish.

Silkened with cream and topped with a decadent morel, it’s a beautiful soup for a rainy April day. Get the recipe here.

 

TIFFANY & CO. ELSA PERETTI MODERNIST COVERED SOUP TUREEN ON TRAY

This spectacular Mid-Century Modern soup tureen was designed by the famed Elsa Peretti for Tiffany & Co. It is made of sterling silver. This signed piece was made in Italy in the 1980s.

ANCIENT IRISH LEEK & OATMEAL SOUP -- BROTCHÁN ROY

This beautiful soup makes the most of leeks, a favorite springtime vegetable. Seran Norr, of A Village Pantry, does this ancient recipe justice.

More than just a standard leek and potato soup, this calls for pinhead oatmeal which gives a lovely texture and flavor. Nutmeg and chives add beautiful notes.

The ancient Druids warmed their bones with this recipe.

Brotchán means soup or broth and ‘Roy’ is likely an English adaptation of the Gaelic, Irish word for King which is Rí.

18TH CENTURY ENGLISH CREAMWARE MELON-SHAPED TUREEN

This unusual English Creamware Melon Shaped Tureen sports a decoratively vented lid. It comes with an attached under plate. It was made in England, Circa 1780.

WILD MUSHROOM SOUP WITH ARUGULA AND CRISPY SERRANO HAM

This soup is We Call Him Yes! Chef!’s Corby’s adaptation of a great recipe by Chef Bobby Flay. It’s magic ingredient is porcini mushroom powder, one of our kitchen’s most prize ingredients. If you don’t have it, you can make your own by grinding dried porcinis in a spice mill or coffee grinder.

The soup is full of fresh mushroom flavor to take full advantage of spring’s bounty. The Serrano ham crown is both a garnish and a meaty salty flavor embellishment.

 

ADOLPHE HIMMEL LIDDED SOUP TUREEN

This  magnificent Adolphe Himmel Lidded Soup Tureen (ca 1861-77) was made for Hyde and Goodrich, of New Orleans. It is made of coin silver. Check out the unusual graceful organic shaped handle.

SUPER GREEN SOUP

This soup sings “Spring!” It’s simple. It’s pure. And it’s very green. Anna, of Dash Drizzle Dollop Devour, developed this recipe with the intense clean flavors of spinach, rocket (arugula), watercress and courgettes (zucchini).

 

SEVRES SOUP TUREEN, 1757

This tureen was a diplomatic gift from Louis XV to the King of Denmark and Germany.

Louis XV set up his own manufactory at Sevres, which became a premier producer of intricate collectible porcelains. The pieces were treasured for their pure whiteness, durability and the brilliance of the coloured glazes and enamels.

On exhibition at the Harley Gallery in Nottinghamshire, England.

 

CHICKEN POT PIE SOUP

What a brilliant idea! Chicken Pot Pie Soup! It’s cozy, comforting, and elegant all at once. This gorgeous recipe by Dax Phillips of Simple Comfort Food is one of those “Why didn’t I think of that?” genius epiphanies. And, it’s a recipe we’ll be keeping handy to try again and again.

Filled with all of the yummy ingredients in a traditional chicken pot pie, it’s in soup form, so it’s lighter -- perfect for a rainy spring day. Get the recipe here.

 

MINTON SOUP TUREEN WITH MATCHING UNDERPLATE

This wonderful hand painted large oval soup tureen was designed and produced by Minton in 1890 in England. It is made of hard paste porcelain with an all-over blue and white seaweed motif and gilded edging.
