CLEARLY BEAUTIFUL ICE TREATS
Edible blossoms make popsicles and ice cubes clearly beautiful. Not only do they look divine, these recipes add a clear dose of nutrients and antioxidants that come in especially handy in the heat of the summer. Check them out below.
COCONUT ROSEWATER FLORAL POPSICLES
“Coconut Rosewater Floral Popsicles,” by Chelsea Hunter Harrison, of The Naked Fig, taste as pretty as they look. Harrison first developed the recipe when she saw some edible flowers at the market. Later, working as a volunteer at Crack in the Sidewalk Farmlet, she ended up harvesting more edible flowers than she knew what to do with.
Knowing they wouldn't last long, she decided to make floral popsicles to preserve their beauty. Part of the pops’ beauty clearly lies in their simplicity. Made only with coconut water, rosewater, and edible flowers.
They are especially refreshing on a hot day -- the coconut water makes them a great way to keep hydrated because it is full of electrolytes.
Harrison makes her pops with raw coconut water from fresh young coconuts.

CALENDULA & WILDBERGAMOT ICE CUBES
These floral ice cubes, spiked with Mongolian Schisandra berries, perfume your cocktails, giving you a boost of antioxidants as you chill. Created by Juliet Blankespoor, of Castanea, these clear beauties are also lovely in both iced and hot tea. Check out these and more frozen herbal treats here.
