10 BEAUTIFUL WEATHER DESSERTS NOW

In celebration of Beautiful Weather, we are sharing some fabulous cloudberry, cloud cookie, and ice cream recipes with you today. They’re really special! Check them out below.

CLOUDBERRIES

A cloudberry is a beautiful coral-colored berry found growing wild in Nordic countries. It’s ability to withstand cold weather below - 40°F, yet flourish in humid marshes and meadows, makes it a unique fruit that is used in recipes any time of the year.

This exquisite berry is also rich in omega-3 fatty acids, antioxidants and vitamins C and A. It’s extremely beneficial to the immune system. Check out some cloudberry recipes below!

1. CLOUDBERRY SOUFFLE

This Cloudberry Soufflé recipe, by celeberity chef Marcus Samuelsson, was beautifully reproduced by Rob Hincks, of Sweden.se Blogs. This light as a cloud soufflé delivers little cloudbursts of tart juice from the cloudberries suspended throughout and crowning the top.

2. MIDVINTERGULD - A WINTER CAKE WITH CLOUDBERRY MOUSSE

MidvinterGuld - A Winter Cake With Cloudberry Mousse, by Louise’s Spis, is made with two kinds of cloudberry mousse, whipped almond panna cotta and golden hjortroncoulis (cloudberry coulis), or jam.

3. BLUEBERRY ICE CREAM WITH BLACKBERRY RASPBERRY SAUCE

This delicious Blueberry Ice Cream with Blackberry Raspberry Sauce, from Carrie Leber, is no doubt one of our new favorite summer treats. Its pop of cardamom and nutmeg makes the blueberries sing through the silky cream.

4. MATCHA MINT CHIP ICE CREAM

Matcha Mint Chip Ice Cream, from The Bojon Gourmet, is a wonderful spin on the classic mint chocolate chip flavor. The addition of matcha green tea adds a slight mellow bitterness and an almost umami note, marrying beautifully with fresh mint leaves with bittersweet chocolate. Plus get a boost from matcha’s rich anti-oxidant power.

5. BOURBON APPLE PIE ICE CREAM

Bourbon Apple Pie Ice Cream, from Broma Bakery, is the perfect Indian Summer treat. With chunks of freshly harvested apples, nuggets of freshly baked oatmeal cookies, and a few splashes of Berentzen's Bushel & Barrel bourbon, it’s a cozy way to chill.

6. TARRAGON AND MINT ICE CREAM

This Tarragon and Mint Ice Cream recipe from Golubka Kitchen tastes like a summer day, all fresh and green, with a unique combination of tarragon and mint. And, you don’t even have to churn it! Perfect!

7. COCONUT MANGO-PINEAPPLE SORBET

If it’s a hot sunny day, this Coconut Mango Pineapple Sorbet, from Chelsea’s Messy Apron, will refresh you with a cool version of sunny tropical flavors. And if it’s gray and raining, this super-simple recipe is a perfect one to reach for to bring a little sunshine to your life.

8. HONEYDEW SAKE SORBET

The clean, lightly sweet flavors of honeydew and unfiltered sake marry beautifully in this Honeydew Sake Sorbet from Sugar and Charm. And we love the big melon bowl idea! You can also make it into popsicles! Perhaps an addition of Midori would be lovely too!

9. TEQUILA SUNRISE SORBET

Sorbet for breakfast? Why not? This Tequila Sunrise Sorbet, by Alexandra Caspero, of Delish Knowledge, braces you as it chills you. It was originally meant to be dessert, but we think it makes a beautiful breakfast treat.

Try adding a bit more tequila a batch to turn it into a beautiful sunrise cocktail. Either way, with orange and cherry juice, this just bursts with tart fruitiness.

10. LITTLE ALMOND MERINGUE CLOUD COOKIES

These Little Almond Meringues, from A Baking Girl, are bite-sized clouds, with a crisp outer shell, yet soft and fluffy inner filling. They are a perfect treat to accompany your lazy puffy cloud gazing afternoons this summer.
